I know families that go all with appetizers, cocktails, followed soup hot, beautiful salads, ham or smoked turkey, potato and leek gratin and grilled vegetables. Some people prefer to keep the simplicity and soup on Christmas Eve, snacks and drinks. For me, I prefer the more elegant Christmas dinner in the evening.

I am invited to walk in the door, I think my house smells wonderful, the picture is beautiful and the food is great. I want a dessert of the season as a cheesecake eggnog or a cheesecake covered with chocolate ganache. I want to serve Irish coffee after dinner and call one night, after all, we must go to bed so Santa can come!

Christmas brunch at my house is a small gathering just grandparents and anyone else who does not have other plans for the day. I usually try to serve a new main dish so my guests don’t expect the same old thing, but other dishes are a constant. I always serve coffee, mimosas, juice, fresh fruit, a pastry of some variety and this year an egg, spinach and feta Casserole. I keep it simple. I set my table with place mats, napkins and pixie poinsettias. Then I used a pure white Corelle square set for a clean look at the table.

Last year I served Belgian waffles with pure maple syrup, fried ham, fresh fruit, cranberry juice and simple scrambled eggs. There is very little my dishwasher can’t handle, so clean up is easy. Everyone was happy, satisfied until dinner and ready for a nap. What could be better?

Finally, if you are lucky enough to be invited as a guest at someone’s house this holiday season, don’t arrive empty handed. When invited ask what you can bring. Even if they tell you just to bring yourself you can find many gifts they’ll really appreciate. O-Sensei Morihei Ueshiba 12.14.1883-4.26.1969

When O Sensei had completed their training in various forms of swords and Jujitsu, Ueshiba became famous as one of the strongest men of his time in Japan. It's summer and the fruits are abundant!

The berries are available all year in most areas but there has nothing but dessert recipes easy obtained berries were fresh.

Summer Fruit Bowl

1 tablespoon sherry or juice Orange
1 cup sliced fresh strawberries
1 cup fresh blueberries
1 cup green seedless grapes
1 cup shredded coconut
1 to 14 ounces pineapple chunks, well drained
1 cup sour cream
1 tsp tea vanilla extract

Sprinkle lady fingers with orange juice and sherry or line 1 quarts ½ chopping bowl with crackers. Combine strawberries, blueberries and grapes. Combine nuts coconut, pineapple, sour cream and extract. Stir the mixture lightly into fruit. Spoon all in line bowl. Refrigerate before serving.

Makes 8 to 10 servings

Strawberry Peach Sorbet

The perfect dessert for the summer when these fruits are at their first freshness.

4 large peaches
1 pounds fresh strawberries, chopped
4 tablespoons fresh lemon juice
1 cup superfine sugar

Add the peaches in boiling water and cook for 2 minutes. Remove peaches from pan and immerse in cold water. When peaches are cool, remove skin and stones.

Combine the peaches in a pulp in a large bowl. Skip pulp peaches, strawberries and juice lemon in a food processor. Stir sugar into fruit mixture, pureed other 10-15 seconds. Pour into a large bowl and freeze until hard.

To serve:
Remove the dish from the refrigerator 1 hour before serving and let sorbet to soften in the refrigerator.

Mixed Berry Brown Betty

Mix fruit with 3 / 4 cup brown sugar, wine and lemon juice. Set aside.

Do Melt the butter with the cinnamon, salt and 2 tablespoons of brown sugar in a saucepan. In another bowl, mix the crumbs and cracker crumbs. Pour butter with bread crumbs and mix well.

Place 1 / 3 of crumb mixture evenly in bottom of 6 or 8 molds or bottom of a baking pan square. Add half the fruit mixture, a spoon, then another 1 / 3 of the crumbs. Add the fruit mixture and finish with remaining mixture remaining crumbs. Bake for 40 to 45 minutes until fruit is bubbly and crumbs are golden.
