Carrot-Fruit Bundt Cake
3 cups all purpose flour
2 v. tea baking powder
1 1 / 2 teaspoon baking soda
1 1 / 2 teaspoon cinnamon
Salt 1 / 2 teaspoon
1 / 2 cup dried apricots diced
1 / 2 cup currants
Ginger 1 / 4 cup granulated, finely chopped
1 cup granulated sugar
1 cup firmly packed brown sugar
2 large eggs
Whites 2 large egg
1 cup applesauce
1 / 4 cup canola oil
4 cups grated carrots
1 tsp tea vanilla extract

Preheat oven to 350 degrees. Grease and flour a 12 cup Bundt pan set aside.

In a large bowl, combine flour, baking powder, baking soda, cinnamon and salt, set aside.

In a small bowl, reserving 2 tablespoons apricots and 1 tablespoon raisins.

Mix the remaining apricots, currants, and ginger in the flour mixture.

In another bowl Large, mix granulated sugar, brown sugar, eggs, egg whites, the applesauce, canola oil, carrots, and vanilla. Stir well together, using the back of a spoon to break up a group of users of sugar. Stir the sugar mixture to flour mixture. Pour into prepared pan roll.

Stir the reservation (after the cake recipe) apricots and raisins currants in the glaze mixture. Pour the icing on the cake cooled, by pressing the fruit if it respects the cake. Sprinkle on the cake, pressing lightly to fit.

Yield: 12 servings

NOTE: This cake is even better when cooked the day before serving to blend the taste.

I was given a set of everyday china that I really couldn’t use at my wedding shower. The giver was really sweet. She thought since the only china I’d registered for was formal that I must have forgotten about what we were going to eat off of every day. The fact was I actually had a full set of very nice day-to-day china. The box o’ china I was given wasn’t my style and wasn’t something I could use…but I turned it into a set of sheets we love and use to this day and a cute purple soapdish. I never told the giver.

Unless the givers are people who are going to be hunting in your home for their gifts, just thank them and don’t worry about it. If someone asks about their picture frame, you can always tell them you’re waiting until you have juuuust the right picture…and then never happen to find the right one.

If the giver of the pink bedroom comes looking for it, tell them you’re not breaking out the sheets and towels until you’ve done the painting. Then just don’t quite get around to it.

7 cups of cider vinegar
5 cups Splenda granular

6 c. Tea Turmeric
Green food coloring, optional

Pour hot mixture over cucumbers in jars. Lids of jars in the water boiling. Sealing jars with lids hot. Process in boiling water bath for 5 minutes to seal.

PEPPER RELISH

18 green peppers
Peppers 18 red peppers
18 medium onions
6 cups vinegar
3 tablespoons salt
1 cup sugar
4 cups Splenda granular
1 tablespoon mustard seeds all
8 stalks celery, finely chopped

Put the peppers and onion in a food processor resilient. Cover the mixture with boiling water and let stand for 10 minutes, drain. Add vinegar, salt, sugar, Splenda, mustard seed and celery and mix well. Pour into a large saucepan and bring to boil. Boil for 15 minutes and immediately seal in hot pint jars. Make sure the lids seal. If jar does not seal, refrigerate and use first.

Note: These pickles and salsa are great gifts for diabetics. They are perfect for opening gifts from home, hostess gifts, birthday gifts for Christmas.
